Mapo doufu
tofu have 5 important things.it's spicy, smell good,colour,hot,mala.
First thing is grain meat,after that ,put garlic,tempeh,red chili,sweet sauce. After that, is the key of the sichuan style .it;s douban.it;s the first key:spicy!
at the same time ,we can smell the second key:smell good!
Third thing is fried until colourful,put tofu,wine,seasoning.Use small fire until boil.The chili is red,tofu is white, green onion is green.it's the third key:colour!
it's almost done. next is thickening with mixture of cornstarch and water.and use the big fire.it's the fourth key:hot!
the final step is put japanese pepper on the top.it's the fifth key:mala!
